Mo de Movimiento is a Spanish restaurant recognized for its environmentally conscious approach from construction through to operations. This project is characterized across four main areas:
First, in materials. The project’s core principle is to use locally sourced materials to address spatial and functional needs. Rubble and old wooden structures were repurposed into tables, chairs, and benches, while lighting and uniforms were sourced from secondhand stores. Local artisans collaborated on dyeing the uniforms and crafting the terracotta cooling systems.
Second, in social impact. The restaurant partnered with an organization that offers first jobs to young people at risk of social exclusion. Currently, half of the restaurant’s staff comes from this organization, contributing to the restaurant’s social goals.
Third, in water management. The restaurant utilizes various water recycling systems, including rainwater collection, a triple-filtration system for tap water, reusing cooling water for the garden, and repurposing hand-washing water for flushing toilets.
Lastly, in energy use. Innovative air cooling is achieved through a temperature exchange system using terracotta vases suspended from the ceiling and a large patio wall unit. Additionally, residual heat from the pizza oven is repurposed to heat water and floors.
